High oleic sunflower oil has the most monounsaturated fats, making it a healthier option than other vegetable oils. It is also more stable than other oils, meaning it doesn't spoil as quickly. Mid oleic sunflower oil has lower levels of monounsaturated fats, but it is still a healthier option than most other oils. And linoleic sunflower oil has the lowest number of monounsaturated fats, and it is not as healthy as the other two varieties.
